Ingredients:

- 2 lbs oxtail, trimmed

- 1 onion, diced

- 2 carrots, chopped

- 2 celery stalks, chopped

- 4 garlic cloves, minced

- 1 tsp ground cinnamon

- 1/2 tsp ground cloves

- 1 tbsp dried oregano

- 1 cup red wine

- 2 cups beef broth

- 2 tbsp olive oil


Instructions:

  1. Season oxtail with salt and pepper. Brown in a large pot with olive oil.
  2. Remove oxtail and sauté vegetables in the same pot.

Ingredients:

- 2 cups mixed berries (strawberries, blueberries, raspberries)

- 1 packet unflavored gelatin

- 1/4 cup cold water

- 1/4 cup hot water

- 2 tbsp honey

- Greek yogurt for layering


Instructions:

  1. Bloom gelatin in cold water, then dissolve in hot water.
  2. Add honey and stir in berries.
  3. Pour into glasses and refrigerate until set.
  4. Layer with Greek yogurt and top with additional berries and a sprinkle of nuts and seeds.
