Surprise! We love a good April Fool’s Day prank, but not as much as we love a creamy ice cream recipe that’s so healthy you might eat it for breakfast!

This recipe is easy to make, vegan if you prefer, and children love it. Plus, you can easily change the flavor or add other goodies – 10 flavor ideas follow the recipe.

Toppings aside, this recipe is fat-free, gluten-free, sugar-free, paleo, and raw. Even with a handful of cookie crumbles mixed in, it’s a lower-calorie, healthy alternative to a typical milkshake or sundae. Enjoy!

Healthy Banana Ice Cream

Ingredients

  • 2-3 overripe bananas (wait for brown spots on the skin)
  • ⅛ to ¼ cup milk of your choice
  • Pinch to ⅛ teaspoon of salt

Directions

  1. Peel and cut bananas into large chunks and freeze
  2. Blend frozen bananas, milk, and salt until soft-serve consistency
  3. Add flavors or toppings
  4. Serve soft or freeze 30 for minutes and scoop

10 Flavor Ideas for Banana Ice Cream

Vanilla Bean – add ½ teaspoon of vanilla bean paste

Chocolate Banana – add ¼ teaspoon of vanilla extract and 3 tablespoons of cocoa powder

Mint Chocolate Chip – add ⅛ teaspoon peppermint extract; stir in cacao nibs or chocolate chips after blending (a pinch of spirulina or handful of spinach add nutrients and color)

Pistachio – add 2-3 tablespoons of pistachio butter and ⅛ teaspoon of pure vanilla extract; sprinkle crushed pistachios on top

Peanut Butter – add 2-3 tablespoons of peanut butter or your favorite nut butter while blending

Chocolate Peanut Butter – add ¼ teaspoon of vanilla extract, 3 tablespoons of peanut butter, and about 5 tablespoons of cocoa powder (4 tablespoons of cacao – it’s richer)

Strawberry – use 2 bananas; add ½ cup of frozen strawberries and ¼ teaspoon of vanilla extract (maybe a dash of cinnamon too)

Very Berry – add one cup of frozen berries of choice and ⅛ teaspoon of vanilla extract

Pina Colada – use coconut milk, blend in ½ cup of frozen pineapple; stir in shredded coconut after blending

Cookies & Cream – add 2 tablespoons of coconut butter when blending; stir in a crushed cookie after
